做(zuò )法(fǎ ):春笋(sǔn )切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热(rè ),倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时(shí )候加入(rù )盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅盖焖。
