做法:春笋切(qiē )成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮(zhǔ )开后(hòu )转中(zhōng )火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅(guō )盖焖。
